Heavenly Chicken Pasta Salad

At 26 weeks pregnant I am seriously watching what I eat. Literally - watching! That's all I can do right now is to just watch those yummy foods and resist the urge to shove it into my mouth. I want what's best for me and the baby - getting overweight can cause possible complications in the pregnancy like elevated glucose level and high blood pressure.

Since I am not ready to give up on yummy recipe's just yet - looking for equally tasty food which is healthier is my goal right this moment. I have seen some prospective recipes in efooddepot.com which are healthier options. You can even browse the site by origin (country/ethnicity/regions) or by category. There are over 4000 recipes for various food dishes available for you to chose from. And if you have one hard to find ethnic product, some spices or cooking mixes perhaps, which you are looking for for quite some time now- chances are it is available in this largest ethnic supermarket. Their flat rate for shipping is only $4.99. Anyway, one category that I frequent is the healthy recipes categories.

I love this recipe Creamy Chicken Pasta Salad! Isn't it drool worthy? According to the website, its ingredients and instruction is this:

INGREDIENTS

  • dressing:
  • 1 cup lemon low-fat yogurt
  • 1/3 cup mayonnaise or salad dressing
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon poppy seeds
  • pasta salad:
  • 2 cups uncooked bow-tie pasta
  • 1 can premium chunk breast of chicken, drained and flaked
  • 1 can mandarin oranges, drained
  • 1/2 cup sliced green onion
  • 1/2 cup sliced celery

DIRECTIONS

  • For the dressing: combine the yogurt, mayonnaise, lemon juice, salt, pepper, and poppy seeds in a small mixing bowl; mix well.
  • For the pasta salad: cook the pasta according to the package directions; drain and rinse under cold water. combine the pasta, chicken, mandarin oranges, green onion, and celery in a large bowl. add the dressing; toss to coat. cover and refrigerate until time to serve.

The directions seem pretty simple enough to follow even for a undomesticated woman like me. The only place locally which served chicken salad the way I like it was Casa Verde and it is a pleasant delight to find such healthy recipes available for me online. I can now try my hand on cooking especially with a growing family. I know at 26 years old its pretty late for me to try out my luck in the kitchen but its worth the try, right? My husband is even better than me in the kitchen!
